Diez Bay of Biscay Anchovies, by Don Bocarte
Anchovies. Limited series. The highest quality anchovies are found in April, May and June; this is when Don Bocarte purchases the anchovies and prepares them with salt, where they are preserved for a minimum of 8 months and the temperature and humidity are closely monitored. The anchovies are cleaned by hand and undergo a very strict quality control process.
Forget all preconceptions you may have of anchovies… after your try these, all of the others you’ve ever tried seem like rubbish! They’re neither salty nor spiny, not the scratchy and salty ones you find on pizza; these are just creamy and melt in your mouth. Other anchovies will seem like pure salt, with these, you can taste the fish itself (which is deep and intense). Try these with tomato, olive oil, and a touch of sea salt. Delicious!
